π Ingredients
For the Fish
- 1 whole fish (Tilapia, Red Snapper, Mackerel, or Sea Bass) β cleaned and scored
- 2 tbsp vegetable oil or melted butter
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Β½ tsp cayenne pepper (optional)
For the Suya Spice (Yaji) Rub
- 3 tbsp ground roasted peanuts (or peanut powder)
- 1 tbsp paprika
- 1 tbsp ginger powder
- 1 tbsp chili powder or cayenne
- 1 tsp garlic powder
- 1 tsp onion powder
- Β½ tsp white pepper
- 1 tsp salt (adjust to taste)
- Optional: Β½β1 tsp bouillon powder for depth
Optional Garnish
- Sliced red onions
- Fresh tomatoes
- Lime or lemon wedges
- Fresh parsley or cilantro
πͺ Instructions
1. Prepare the Fish
- Pat the fish dry.
- Make 3β4 deep diagonal cuts on each side (this allows seasoning to penetrate).
- Brush lightly with oil to help the rub stick and prevent sticking on the grill.
2. Season the Fish
Mix salt, garlic, onion powder, paprika, and cayenne.
Rub this base seasoning all over the fish, including inside the cuts and cavity.
3. Apply Suya Spice (Yaji)
Mix all the Yaji ingredients in a bowl.
Rub generously over the fish, focusing on the cuts.
Let it marinate 30β60 minutes.
4. Grill the Fish (BBQ or Charcoal)
- Preheat grill to medium-high heat.
- Oil the grill grates or place fish on foil/perforated tray to reduce sticking.
- Grill 6β8 minutes per side, depending on thickness.
- Brush with a bit of oil halfway for extra moisture and beautiful color.
- Fish is ready when it flakes easily with a fork and skin is slightly charred.
5. Serve
Place on a plate and sprinkle a little extra Yaji seasoning.
Add fresh onions, tomatoes, and lime wedges.
Serve hot with:
- Grilled plantains
- Suya pepper
- Rice
- Sweet potato fries
- Flatbread
